Maple-Miso Salmon
Pecan & Panko-crusted Miso Salmon served w/ Quinoa & Lemon-baked Asparagus

18 oz salmon
Unsalted butter
Miso paste (White or red). White miso is lighter in flavor, and red is bolder and saltier. There is a mixed version called mixed miso or awase miso that blends the flavors nicely. Miso can be found in most supermarkets now, but if you are near an Asian market, you will have more variety.
Maple syrup (or even honey or agave)
Panko crumbs (Japanese bread crumbs)
Pecans (you can sub for walnuts or omit if you are allergic)
Sesame oil
White pepper (you can use black)
Fried garlic ( Also found in asian supermarkets, but you can just use granulated garlic
powder)

Ingredients
(2) 8-oz Cuts of Salmon
4 tbsp of unsalted butter, softened
1 tbsp miso paste
1 tbsp maple syrup
1/4 C panko bread crumbs
1/8 C crushed pecans
1 tbsp fried garlic
1 tsp sesame oil
1/2 tsp white pepper
Directions
1. Mix butter, miso, maple syrup and sesame oil together until smooth. Set aside.
2. Combine crushed pecans, fried garlic, white pepper & panko crumbs.
3. Place the salmon skin down on a sheet pan with parchment paper.
4. Spread the butter & miso mixture onto the salmon.
5. Sprinkle the pecan & panko mixture on top of the salmon, covering the butter.
6. Roast at 400 degrees in the oven for 15-20 minutes for medium well fish.
